How to make Palitaw
Palitaw is a Filipino Dessert. “Palitaw” means to float or rise.
Ingredients:
1 cup glutinous rice flour
1/2 cup water
1/2 cup sugar
1/2 grated sweet coconut flakes
2 tablespoon sesame seeds
Combine glutinous rice flour and water in a bowl.
Mix them until a dough forms.
Make sure the the dough is not too sticky and not
too dry.
If the dough feels sticky, sprinkle with rice flour and continue
kneading.
If the dough feels too dry, add a few drops of water and keep kneading
until the dough feels smooth and dry to the touch.
Divide the dough into ping pong sized balls.
Flatten each dough into a patty.
Boil 2 quarts of water in a pan.
Place the dough patties into the boiling water one at time.
Wait till the dough patties are floating on top of the water.
That means they are already cooked.
Removed the floating dough patties and place them in a plate to
cool down.
Pat dry each dough with a clean clothing and set aside.
Meanwhile mixed the sugar, sesame seeds and the grated sweet coconut flakes.
Coat each of the dough patties on both sides with the mixture.
Set each patty on a plate. Very good when served warm.
